Cheddar, Feta, Veggie Quiche

Hi all, happy Friday!
Let's get real. Sometimes you've got time to make an entire french apple tart from scratch, other times, not so much. Today I'm sharing my quick-and-easy recipe for this tasty veggie quiche! Grab any and all the veggies in your fridge and let's do this!!

I used two cheeses: crumbly, tangy feta, and creamy Wisconsin cheddar. Truthfully, whatever you have around should work. That's the beauty of this versatile "egg pie" :)

Cheddar & Feta Veggie Quiche

4 eggs
1 cup milk
1/4 Feta block, crumbled with fingertips
1/2 Cheddar block, grated
2 tomatoes on the vine
1 head of broccoli
1/2 bag frozen spinach
1 frozen pie crust (I got mine from Trader Joe's, you can find it here)
salt and pepper to taste
DIRECTIONS
1. Allow the pie crust to defrost on the counter for about 2 hrs
2. In the meantime, shred the cheddar, crumble the feta, cut the florets off the head of broccoli, defrost the spinach, and thinly slice the vine tomatoes
3. When the crust is malleable, lay it onto a pie pan and sprinkle with feta, broccoli and spinach
5. Beat the eggs, milk, salt and pepper together in a mixing bowl
6. Pour the egg mixture over the vegetables and top with the cheddar cheese and vine tomatoes
7. Bake at 350ºF for 45-50 mins. Cool, and enjoy!
