Apple Tart

Good evening, everyone!
Fall recipes are officially underway-- and what's better than buttery crust, softened apples, and sweet jam? Nothing. Absolutely nothing.

As some of you may have seen on my instagram, I've been itching to make an apple tart. The midwest Honeycrisps I got at the store were perfect all on their own, but I couldn't resist making something with them. I arrived at this classic french apple tart.
And today the rooftop was locked-- so naturally I improvised on the fire escape... Anything for that natural light! Don't worry, there was protection between the tart and the grates :)


One of the things I really loved about making this tart is that it was beautiful every step of the way. This recipe really goes to show that if you've got fresh ingredients, there isn't much work for you to do. The apples here speak for themselves!
And if you put in the time to arrange the slices... the payoff will be even more extraordinary. Note: ratatouille resemble, unintentional.

French Apple Tart
about 5 servings... or 1, depending on who you want to look at this
about 5 servings ...or 1, depending on how we want to look at this
4 apples, I used Honeycrisps
1 1/4 cups all purpose flour
1/2 tbs granulated sugar
1/4 tsp salt
1/4 cup cold water
6 tbs butter (I know... but trust me)
pinch raw cane sugar (optional)
spoon of jam, I used black current (optional)

DIRECTIONS
1. Combine the flour, sugar, salt and 5 1/2 tbs diced butter in a chopper/food processor. Pulse until mixed
2. Add the cold water bit by bit until a dough forms
3. Knead, then wrap in plastic into a ball. Store in fridge for 1 hr minimum in plastic
4. Preheat the oven to 375º then roll the dough out. Cut it into a circle
5. With a sharp knife, slice apples thinly, then arrange onto the dough base --I sharpened my knife before starting, to get a really clean cut
6. Arrange apples onto base, then sprinkle butter on top
7. Throw it in the oven for 45 minutes until golden
8. (optional) Sprinkle sugar, spread jam, or drizzle honey on top. These apples were a little bit dry, but if your apples are on the juicier side, you're set!
